question about fermented salsa

I love the salsa from the NT book and have a bunch of tomatoes that should be ripe soon. Is it possible to can (or otherwise preserve) the salsa to eat it year round? I don't know how to do this becuase it possible I want to preserve the enzymes and bacteria created by the fermenting process. How long does it stay good in the fridge? Thanks

It will keep for awhile in the fridge. I freeze mine in jars and they do well. I've started yogurt from frozen starter, so I believe the bacteria survives the freezing.
