Does anyone have the fermented ketchup recipe handy?

I had NT home from the library a couple of weeks ago, but never really got around to using it. Well, we're out of ketchup, and I would love to try to make my own. Does anyone have the recipe? I would rather leave out the fish sauce, is that possible?

3 cups canned tomato paste
1/4 cup whey
1 tablespoon sea salt
1/2 cup maple syrup
1/4 teaspoon cayenne pepper
3 cloves garlic, peeled and mashed
1/2 cup fish sauce

mix all the ingredients up, put in a jar, and leave at room temp for 2 days before putting it in the fridge

Thanks so much! So do I just put it in a mason jar or something? Do I leave the top on or not?

Yup a mason jar. The recipe doesn't say about the lid... I would put the lid on though, so that nothing got into it. Or at least cover it with a dishcloth or something!

I leave out the fish sauce and add in some tamari. After fermenting I add in enough water to make it the RIGHT consistency to go into the "squeeze" bottle.
