What exactly is notebooking? I have heard HSers mention it here and there, but how exactly do you get started and what are the benefits of it for the child? What would be the appropriate age to start something like this?

I think what people are talking about is just writing down what you are doing that seems educational. That way if later you need a record of what you did for homeschooling you have one.

I was thinking that Charlotte Mason people use that term for writing and drawing their observations in a nature notebook? I believe I've also occasionally heard it used of other forms of journaling or portfolio-making.

Notebooking is kind of a sister to lap booking. We lap book, and havn't really used notebooking yet. basicly you write and draw on a piece of paper then slip it into a page protecter and into a 3 ring binder. Anything small and flat like a photo can be glued in as well. Generaly the notebook has a theme. You could also just use an excersise book. Some notebooks are more creative then that though.

Thanks for the replies ladies! It sounds like a combo of journaling and kind of like scrapbooking too... keeping a book of what you (child) have learned. I think it's something we might do, although I'm not die hard charlotte mason, I do think it's important for kids to have a lot of exposure to nature and animals when they are very young.
