Vital Wheat Gluten (Seitan?)

I bought a box of Vital Wheat Gluten almost 6 months ago and have yet to do anything with it. The truth is: I don't know how.

I attempted making Seitan from whole wheat flour. It got very glutenous, but was still pretty mushy in texture. It reminded me of fatty pieces of beef - or uncooked ground beef BLEACH

So, I'm wondering what this box of Vital Wheat Gluten can be used for. I assume I can make seitan from it. Anyone have a good recipe?

Thanks!

recipe

my favorite dish in the whole wide world just happens to made with seiten!

ok, i am from the south where chicken fried steak is everywhere, and before i was a vegetarian, this was one of my favs. so this is how we make the veg-substitute for chicken friend steak. warning! this is not a low-fat recipe!

-take the seiten cutlets, salt & pepper them, and batter them in either egg & milk or just plain soymilk if you're vegan. flour them with a bread-crumb mixture. we even take pieces of potato chip and crush them up in the flour-bread-crumb mixture to make the seiten extra crispy. re-batter them and re-flour them. you can even do this a third time if ya want extra yum!

when you're done, pan fry in a little bit of oil until golden on each side. serve with mashed potatoes for dippin' and green beans or other vegetable of choice.

That sounds yummy!

How do you make the cutlets, though?
