I use a small card table. It doesn't bounce around at all. Of course, that's probably because I still use my mom's 40 yo sewing machine. That thing easily ways 40 pounds or more!
For cutting I have a big laminate table from Joann's. The center part is about 12" wide and then there are two "wings" that are each 3' wide. When the whole thing is open it's a good 7' of work space, which is great for big projects like curtains. The only downside is that it is too high for me to sew at, since I'm kind of short.
