anyone else having this problem? I transfered my ferments to the fridge and they are making it really stinky. I am afraid that other foods are going to start smelling and tasting like it. I did what wild fermentation said and we don't have lids on them. the plate is just holding them down in the brine. what do others do and do you have the same problem?

I transfer all of my ferments into lidded jars (pint, quart, or half-gallon) in the fridge. I don't want my ferments picking up off flavors or adding flavors or smells to my other foods.

The plate and cloth over the food is only for when it is fermenting at room temperature. This is so the food can pick up wild yeasts that help the fermenting. Once it has fermented at room temperature for a bit, you can put a lid on it and place it in the fridge. It will continue to age, but at a slower rate.
