Oatmeal/Fruit Salad

Oatmeal/fruit salad (excellent energy food)

2 c. oatmeal
1 c. no-fat milk
honey (I usually use about 1 T., but you can make it as sweet as you like)

Cover and chill overnight to allow oatmeal to soak up the milk. (can use any type milk including soy milk)
Stir well and add any fruit you like.
Here are some suggestions.

Mandarin oranges (my favorite)
Chopped pears
Grapes

It makes a great afternoon pick-me-up. My Mom has been making it for years.

My only question......is it a typo where you have listed 3/4 cup canned crushed tomatoes, twice?

I made the African Peanut Stew this past week & let me just say YUM! It's now on the list of freezer meals for after the baby arrives!

It is too! I made it a few days after she posted it, for my sister and her family and mine too, and we LOVED it.

I'll 2nd that! I made them last week & they were delicious. They were made even better by the fact that I finally perfected homemade corn tortillas to go with them!

I was just thinking how funny it is that we haven't seen any activity in this thread since early November. It's not surprising, is it? DH and I in our laziness and general overwhelmed-ness have resorted to cooking meals that are extremely quick and convenient. And anything that's taken more preparation or creativity has been a special holiday-type item and would not fit in the "Healthy Recipes for Pregnancy" category. Unless you consider Snowflake cookies, Boeuf Bourguignonne, or cheese fondue healthy. =)

I've noticed that several of my pregnancy books say weight gain stabilizes or decreases in the last weeks. I think there must be an exception for when that last month overlaps with the holidays!
