Finishing Seams

I have attempted to sew my girls clothing in the past and have done well except when it comes to seams and finishing them. I want them to have professional looking seams and I'm not sure I fully understand WHEN to finish. For example, after I cut the pieces out and if I sew a side seam do I 'finish' it then OR do I sew the entire outfit together and finish seams at the very end of the project? This question goes also for neck seams. Also, is there a particular order of which seams to finish when to make sure it lays nicely?

I have lots of books on different finishes and I'd like to practice them but none of the books are telling me WHEN to apply these finishes.

Here's a recent discussion about how several of us finish our seams. I'm in the "I don't finish them properly" group but if I did, I would wait until the whole thing was sewn instead of finishing them when they are cut.
