Bottom of the PB jar noodle sauce

That dry PB left in the bottom of the jar (i.e. if you're using the natural PB)was annoying me as it gets too hard to spread easily on bread and I hate to waste it. So I started making peanut sauce with it. It uses up the bottom of the PB jar and you get a tasty sauce out of it, and it saves cleaning as you make it in the PB jar that you're about to throw away. It's a messy sauce otherwise. I use this sauce in noodle stirfrys and in cold noodle salads. Had it tonight, yum. My 3 yo loves it too cause it's peanut butter sauce. She picks out the bean sprouts and cucumber but likes the noodles.

(all measures are approx)
1/4 c Peanut Butter (what's left in the bottom of the jar, I don't measure it.).
1/4 c soy sauce
3 tbs rice vinegar (or other mild vinegar ok)
1 - 2 tbs sweet chilli/garlic sauce (ie Thai or chinese style) optional
~2 tbs honey or other sweetener, up to 1/4 cup if you like it really sweet
1tbs minced ginger
5 garlic cloves minced

Stir up with a fork and shake the jar really hard.

For Stir Fry - Saute some green onions and meat. Add some other veges (bean sprouts, snap peas, carrot, cucumber etc). Add sauce. Turn off heat. Add rice noodles and mix.

For peanut noodle salad - Add sauce to cold rice noodles and veges (carrot and cucumber are good).

You can thin the PB sauce if you need to by using warm water or oil

Rice noodles get really sticky. After heating them, drain in colander and toss with about 1 tbs sesame oil to prevent them clumping together.

If you buy the ingredients at an Asian market they'll be a lot cheaper than at the supermarket.

I do this too! Everybody loves it.

I've also used it to marinate chicken in and then grilled it, yummy!

What a great idea! I love Asian peanut sauces, but I never thought to do this, despite ripping up sandwiches from trying to spread those hard clumps, LOL!

Can't say I have that problem, as I always stir thoroughly before the first time I put it in the fridge.

We just got done eating a sunbutter curry though. Yummy, quick meal.

My stomach is growling just thinking about it! Unfortunately I don't even have 1tsp left in the bottom of my PB jar.
