Tomatillo recipe please?

i have tons of tomatillos from our friend's garden and do not know what to do. we had salsa already...
do you have any recipe to share?

I use them in a Thai stir fry with pork, red tomatoes, tomatilloes and peppers finished with a bit of sesame oil. The original recipe calls for green tomatoes but it's never easy for me to find them. Tomatilloes work well.

I've also just cut them up and used them in a taco bar.

Anyone else? Our little baby tomatillo plant is now about 4x4 feet and starting to fruit!
I've had a really good pork-tomatillo chili but no idea how to make it, and I'm sure there has to be more you can do with these things.

You can try making Tomatillo sauce with it.This is the recipe i always use. Typically its used with enchiladas but I would think you if you don't eat enchiladas you could use it in other ways.

Remove the husks from the tomatillos. Then place them in a pot with water just covering them and boil till soft. Depending on your stove it'll be around 10 minutes. Place in blender with about 2 to 3 garlic cloves. I usually start out with 2 and then add a clove and then taste.

Take the same pot you used to boil and add about 2 tablespoons of whatever kind of oil you use on a daily basis to cook with, although nothing with a strong taste.Pour the tomatillos back in and add onion ( i usually use the sweet onions, using almost all of the onion, but this will depend on what you like) Add salt and pepper to taste.

I boil them the same as the PP, but them lightly blend (I use my food processor) with garlic, a little mild (or boiled) onion, some green bell pepper and then a little oil, lime juice, cumin, ccoriander and cilantro leaf, also salt and pepper. It comes out like a salsa verde. Yum

I make a delicious salsa with them. I don't measure, just tomatillos, tomatoes, red oinion, garlic, lime juice, cilantro, salt. Let it refrigerate for a few hours (if desired) and eat! You could add any other veggie you wanted. You might even try doing the salsa recipe from NT with them, so it ferments.
