I'm trying to incorporate more blackstrap molasses recipes into my repertoire. does anyone have any good ones or any advice on how to use it in place of sugar/other sweeteners? thanks.

Okay, I don't like rye, but this is an awesome sourdough molasses pumpernickel bread recipe: http://www.recipesource.com/baked-go...ernickel1.html This recipe I'm more inclined to make: http://www.recipesource.com/baked-go...9/rec0969.html It's a German quickbread with buttermilk and molasses. You can just soak the flour overnight, and sub flax seeds or other for the wheat germ, and it's NTified.
recipesource rocks. . . . Other than in our oatmeal, we make 'baby coffee' for the toddler (cream and molasses, coffee-colored), and molasses can be both the sweet and bitter note in many sauces- bbq, beef reduction, or peanut, for instance.

I make a granola that has it in it, it is maple nut granola... I think it's about 3 c oats, all kinds of nuts, sesame seeds, sunflower seeds, flax seeds, oil, molasses and maple syrup... so yummy.

I use at least a tbsp or two in my whole grain bread loaves. I sometimes put some in my meat crockpot recipes. It all started out when I renounced bottle sauces due to all the crap they put in it. I was trying to imitate worcestershire sauce and noticed that the first two ingredients were vinegar and molasses, and so substituted vinegar and and a dollop of molasses in my crockpot recipe instead of worcestershire sauce.

thanks so much for all the feedback, can't wait to try them out. any advice/ideas about how to substitute it for sugar in recipes? i read somewhere that you had to add baking soda to counter the acidity, but haven't actually tried it. any testimonials out there?

do you just mix everything together at one time, or is there a specific order i should go in? never made my own granola before, but it sounds good...

I also add it to milk for my kids. They love it.

i will sometimes add it to the sugar in a recipe to give it a more carmel-y flavor. So, I usually add a little bit less sugar, and a tblsp or two of blackstrap molasses. It's reallllllly good if you take a tiny bit in a cup of strong coffee, with a little cream

oh sorry you mix the dry ingredients and the wet separate then add them all together, then you bake it for 20 min at 350, stiring every 5. My husband and I LOVE IT... it's a bit expensive using the real maple syrup... but so good.

no problem. THANKS we love his name too. At first we got a lot of junk from our family about it but they are used to it now... Now we have to think of a good name for our next baby, I'm nine weeks!

I'm not up on all the NT rules and whatnot, but I like to mix molasses with nut butter as a dip for apple slices. Yum!

btw, i don't think my family would take too well to the name story either, but that's their thing. i'm sure they'd get over it too.
