I just found local (7 miles from my house!) grass-fed organic beef selling for 1.35 a lb!!!!!!!! Our health food store sells very few cuts of grass-fed and it's 17-18 for less than a 1lb peice of meat. I'm trying to convince dh that buying a side of the local grass fed is a good investment but he only sees the upfront cost. (we'd have to buy a chest freezer as well) 1.35 a lb is even less than conventional meat. I'm having lots of health issues and I'm trying to get into a NT diet to try to heal myself but dh would rather eat canned beans and white rice every day because it's cheap. He grew up on a NT diet and is very healthy, I grew up with powdered milk and aldi corn flakes. He doesn't entirely realize that my diet is what made me this sick. How do I convince him that it's worth it both for our family's health and for economic reasons to buy the grass fed beef?

I'm not sure how you can convince him about the health aspect, but I wanted to comment on the initial cost. We got an upright freezer for FREE through Freecycle. A woman's children were grown and she just didn't buy as much food--she didn't need it any more. It is in perfect shape. So, I was finally able to get a quarter beef, for a little more than your cost. Your price is AMAZING!
There may be ways to do this that are even less expensive than you're currently thinking. See if you can find a freezer for free. You just might!

Well that beef you want to buy is cheap!
A freezer is a one time expense minus the monthly electric.
We have 2 freezers, thus we but in bulk all the time and put up stuff from our garden in the freezer.
