Good veg cookbooks?

I am in search of a vegetarian cookbook with healthy, easy recipes. I'm not too handy in the kitchen, and most veg cookbooks I've read call for a lot of ingredients (which I really can't afford) or aren't too health-conscious. We aren't really into anything too "exotic" tasting, either. I'm just tired of making the same 10-15 dishes over and over again.
Can anyone recommend a few good titles? Thank you!

"The Vegetarian Family Cookbook" by Nava Atlas or she has another one that's a five ingredient one. She also has a website www.vegkitchen.com so you can try some out before you get your hands on the cookbook.

I really like Mollie Katzen's books... I have The Moosewood Cookbook and The Enchanted Broccoli Forest. They're pretty healthy, I generally already have almost everything in the recipes, and the food tastes good...

The Passionate Vegetarian by Crescent Dragonwagon (no i'm not kidding, that's her name) is part of what inspired me to be a vegetarian.

Ooooo...I love her cookbook! A bit too fusy for me on a regular basis and most of the recipes don't seem to work for my 18 mo, but for the wealth of information I found in those pages it was TOTALLY worth the $.

What a great thread. I'm just starting this lifestyle and I need help, motivation, guidance, instruction, etc.

I'm going to get a couple of those books as soon as I can!

My favorite are "How It All Vegan" and "The Garden of Vegan" - good recipes that are not too hard or time consuming - Yum!

My favorites are:

1000 Vegetarian recipes by Carol Sellers- everything is easy and tastes great.
Vegetarian Mother's Cookbook- VERY kid friendly

I know! I don't think there is a thing I have made from the Sellers book that wasn't great and enjoyed by non veg and veg alike. I make her apple pie and I have been asked for the recipe at least a dozen times! I never see people mention her book, but it has been my favorite for years.

I completely agree. I love this book. I've made like half of the recipes in there.

You all got me excited about "1000 Vegetarian Recipes" but I can't find it anywhere. Is that the exact title? Is that how you spell the author's name? I can't find it on Amazon or on a Google search. Thanks!

My own favorites are "Vegetarian Cooking for Everyone" (kind of like the "Joy of Cooking" for veg food) and then a variety of ethnic vegetarian ones. I also just bought "Better than peanut butter and jelly" which looks like it has lots of kid-friendly food (the subtitle is "quick vegetarian meals your kids will love").

I love Mollie Katzen's books. I also really like Nava Atlas' book mentioned by a pp, and Fresh From the Vegetarian Slow Cooker. (I love to be able to cook a yummy, healthy dinner while I'm at work. )

I love Vegan Family Favorites because it is so kid friendly and easy. My son loves everything I ever make from that one-- lots of great, simple, everyday kind of stuff. Both old favorites and newer-style stuff, which is really nice-- check it out:

I'm too lazy to look up authors, but here goes:

The Single Vegan (great when I was a college student)
Vegetariana
The Subversive Vegetarian
Madhur Jaffrey's World Vegetarian
Dakshin (not so good for the beginner, unless you're South Indian)


Honestly, though, I prefer picking through non-veg cookbooks for the amazing veg recipes found within:
Please to the Table (anya von bremzen, Russian and pan-Soviet cookery)
A Fistful of Lentils (Syrian Jewish cookery, I think)

These are particularly good for those of us who need to avoid soy. Veg cookbooks always have too much soy. It's not like tofu is hard to cook! Give us decadent vegetable and fungal recipes, instead!
