vegetarian "tuna" salad

I'm pregnant and have had a strong craving for tuna salad. Problem is, I'm a vegetarian. So, I invented this recipe. It's fabulous (if I do say so myself) and had a close enough texture and flavor to tuna salad (keep in mind, though, that I haven't actually eaten tuna in several years...) that the craving went away. Anyway, here you go:

about 1/2 cup cooked lentils--careful not to let them go to mush
2 diced baby dill pickles or 1 regular one
1/2 stalk celery, diced
dollop of mayo or vegan mayo
salt and pepper to taste

Mix it all up and spoon onto some lovely toasted wheat bread or stuff in a pita. Or just eat it as is. mmmmm!

Or, just substitute lentils for tuna in your favorite tuna salad recipe if you don't like mine.

YUMMY!!!

I make a very similar recipe only I use canned garbanzo (A.K.A. chickpeas & cece) beans. I coarsely mash them up and it is very good. I like the idea of the lentils too. I add onion & cilantro too. Happy eating!
