How do you convert a bread recipe to soaking the flour overnight? Do I just put all the liquids, flour and yeast in? Anything else?

If you mean a quick bread type of recipe, I put in everything but the egg and baking soda.

I've tried a couple of yeast bread recipes that have some sort of fermented milk in the ingredients. I've soaked the flour & liquids over night & then added the other ingredients the next day. This has been pretty successful. I've also tried one recipe that only called for water. I substitued a couple of tablespoons of whey for part of the water & did a similar soak. This also worked well. With bread, I think you have to just dive in & start playing. The ingredients are fairly cheap, so be brave & have fun.

I guess I should just give it a try. Thanks!
