Mmmm! Beef broth & beef stew!

I made about 10 cups of beef broth this weekend, and used about 3 cups of it to make some beef stew in the crock pot. OMG, my kitchen smelled sooo good! And it gelled so nicely.
I used beef soup bones (not sure what bones they were, exactly. The package just said "soup bones") knuckle bones, and a cheap package of short ribs. Chopped carrot, onion, & celery, and enough water to cover all, simmered for a good 18 hours. (wow!)

Next weekend, chicken broth & chicken-noodle soup. I have yet to find a source of chicken feet, though...

Yum. It smells so good, doesn't it? I made some beef roast over the weekend and have a chicken to roast soon.

Next time, try roasting the bones before simmering. Waaayyy richer. Just put them in a shallow pan with onions, carrots, etc. Roast in the oven on low heat, stirring it around occasionally til nice and brown. Then dump it in with the water. You'll only have to simmer for a couple of hours and strain.

You can also roast just veggies and make broth or even just mushrooms.

I usually get a stewing chicken and just simmer that. End up with a couple of gallons of broth.

Mmmm....sounds so good. I've had such a blast making stock - it's my natural air freshener and works great to "freshen" up our house now that we have to have it all closed up since apparently winter has already arrived!
