How much coconut oil is in coconut milk?

I'm slowly making changes in hopes of resolving yeast issues, and the idea of coconut oil as an antifungal appeals to me immensely. As soon as I can get out to the store (DD is a month old, havent gone out in public yet, hehe) I'm planning on getting coconut milk so I can make yogurt with it. Question is, how much do I need to take in to get the benefits of coconut oil?

Compare the fat calories per serving to a volume of coconut oil. All the fat in it will be "coconut oil", so it should be an accurate assessment.

For instance, I have Thai Kitchen coconut milk on hand. It lists 10 g. total fat in 2 fluid ounces. 2 fluid oz = 1/4 cup = 4 tablespoons. Coconut oil has 14 g. total fat per 1 tablespoon. So, 4T/10g=x/14g or 4T*14g/10g= 5.6T = 2.86 cups. So, one tablespoon of coconut oil is equivalent to 1/4 c. plus 1 T plus 2 t coconut milk, or slightly shy of 3/8 c.

Wow! For those with heads still spinning and who don't need mathematical proof, Bruce Fife, the "Coconut Guy" who has written a ton of books and done lots of research, said at the Denver WAPF conference that one can of coconut milk has about 4-4.5 Tbspns of coconut oil in it, which is his daily recommendation, if I recall.

For those who do need the mathematical proof, Tara is THE WOMAN! Go with what she says!

Yay for proof!

I got two cans of organic coconut milk at the HFS today, and (DD permitting) will figure out how to make it into yogurt.

I might have to get used to drinking it - coconut isn't one of my favorite flavors and I'm hoping that the vanilla coconut yogurt will appeal to me.

Funny thing is, I drink kefir plain. Go figure.

It's actually indistinguishable from vanilla diry yogurt-no residual coconut taste at all. It's just tart.

Really??? That's awesome!!!

I'm waiting for a yogurt maker to show up, so I'll probably end up using that (got the cheap Salton one) because making yogurt in my oven hasn't been very reliable. There's no pilot light and no light bulb and keeping it on 'warm' get too warm, so I've always got to keep an eye on the temperature (which is hard to do at night).

Now I'm seriously looking forward to it!

That one has worked GREAT for me. If you don't want to use the plastic container, just plop in a quart mason jar. Fits and works great!

It's my plan to use mason jars - this way I have as many extra containers as I have jars. I don't use much plastic for food storage.

sorry to hear about missing the coconut flavor. Maybe you can add some coconut milk to the yogurt just as a flavor boost?

I'm pretty sure that my coconut flavor aversion is part of the pregnancy food aversion that still hasn't let up. If it weren't for DH to remind me, I'm not sure I'd remember meals. Maybe once food appeals again I'll take coconut milk by itself and enjoy it!
