I have a hard time coming up with lunch ideas

Lunch is just so hard for me for some reason. I can often think of a main thing but don't know what to eat with it. Like I can think of grilled cheese or a wrap but my mind blanks after carrot sticks or apple slices.

What else is good this time of year to eat and is easy for lunch?

Me too!

Heres what I've come up with so far...

-bean (and sometimes meat) burritos sometimes with veggie cheese, we are dairy intolerant round here.
-pb & h on crackers
-celery or carrots w/ pb or almond butter, actually cashew butter is our fav lately
-homemade jerky beef and deer
-bagels with tomatos sliced for me cherry toms on the side for my ds
-homemade popsicles from juice or extra smoothie mix in warm days, adding almonds helps add a little protein
-top ramen (no msg type) with scrambled egg, chopped carrots, celery, peas
-hummus on bagel or crackers worked for a while
-pesto worked for a while
-rice cakes with butter or cashew butter and honey
-nachos w/ beans and olives and cheese and peppers
-olives on carrot sticks

time to make dinner! Hope this is a start. E

Even if you are veg*n you should check out veganlunchbox.blogspot.com. She has some good ideas that could be altered to fit different eating preferences.

Thanks, that's pretty neat. I'm gonna try some of those out, maybe even the Vegan Twinkies. Now that's a wierd sort of oxymoron.

I posted not to long ago about lunch time woes.

Here are some of what we eat:

-leftovers
-grilled cheese with soup, or carrots & dip and apple slices
-soy butter sandwhich with the same things listed above (DS has a peanut allergy)
-mini pizzas on homemade english muffins
-baked potatoes with cheese
-homemade mac&cheese (has eggs in it, very filling)
-fried egg sandwiches
-egg salad
-homemade chicken nuggets

I also usually throw in some type of cooked vegetable with the meals that we don't have carrot sticks with. My kids like greenbeans, peas, and corn. I really like to have some type of protein for/with lunch so we're not starving in an hour.

On Sunday, I make a soup of the week. I make a large batch and we eat in on Sunday, Monday and Wednesday. On Sunday we eat it with homemade bread, Monday we eat it with salad, Wednesday we eat it with sandwiches.
Some soup ideas: Cabbage, white bean and pasta soup, Chicken Veggie Soup, Turkey and Noodles, Tortellini Soup, Potato Soup, Chili, Turkey Albondigas Soup, ect.
The soup takes care of 3/7 days.
Other things we eat:
Refried bean burritos
Baked beans on Whole Wheat Bread with applesauce and cucumber slices
Salad
Leftovers
Quesadillas
