Our favorite sandwich:

Bread: homemade with sprouted spelt, sprouted rye flours, honey, chia and flax seeds
We put the following nitrite/nitrate free meats on one side of the bread: 1 slice turkey, 1 slice roast beef, 1 layer sliced pastrami. Top with 1 slice Kerry gold cheese and put both sides of the bread in toaster and toast until cheese is melted.
Add sliced cucumbers, tomatoes, field greens, and hot peppers.

We do egg salad sandwiches on Ezekiel 4:9 bread alot. I don't know if that is quite NT as the eggs are hard boiled so the enzymes are killed...but I figured it's healthier and more whole foods than lunch meats.

We LOVE the Chutney Chicken salad, on Ez. 4:9 bread or on lettuce.

Also...it's just dh and I but we also like Trader Joe's organic crunch PB and All Fruit Strawberry spread...or Really Raw Honey. For breakfast sometimes I like toast with pb and applesauce with a dash of cinnamon mmmm...it would do for lunch as well.

Also..raw cheese with either sliced tomatoes or fruit chutney.

Once in awhile we treat ourselves to nitrate and nitrite free lunch meat from Trader Joe's but its' pricey and still a compromise...so it's an occasional treat.
