DH finally rejects lunchmeat, need alternatives

When visiting my aunt last weekend, DH picked up one of her food books that described all of the ills of various refined foods. He finally decided to give up lunchmeat!

Coincidently, I had checked WHOLE FOODS FOR THE FAMILY out of the library and that afternoon for nap, read the part about the wrap sandwiches. Perfect -- we used to buy them and DH loves bean mixtures.

Can I make a whole bunch ahead of time and freeze them? The heath food store has sprouted grain wraps that I thought I would use.

Anyone have any other lunch ideas for the lunchbox? We are seriously sleep deprived and rely on defrosting or making something in 5 minutes or less in the morning.

Grill a BUNCH of small marinated chicken breasts and freeze. When needed, pop one in the microwave adn throw it on a bun or in a wrap with fresh spinach, feta and some of his fav dressing.


This is also good on salads and such.

We grilled over one hundred 4 ounce breasts a few weekends ago and are stocked! They are sooo yummy!

What about bean pate? Very easy there are several recipes here in the archives.

Roasted peppers and cheese sandwhiches
Baked provolone tastes like bacon
Nut butter and jam
Crustless quiche in a wrap is goot eatin too!

My dh takes individually wrapped veggie burgers to work. He just zaps them in the microwave and uses those ketchups and mustards that he's been saving from fast food. This is a nice hot lunch for him and he says that someone always comments on how good his lunch smells. He especially likes Morningstar Farms Tomato basil pizza burgers.
This is a great topic-we're always looking for new lunch ideas. He gets sooooo bored of taking the same lunch everyday!

**hummus (chick peas, tahini, lemon, garlic salt) w/ veggies
leftover grilled veggies and cheese
cream cheese and cucumber
egg salad
mock egg salad made w/ tofu
**split pea spread - cooked split peas with parm and cottage cheese and spices
**black bean spread
also good for cold lunches are leftover peanut noodles
bean salads
pasta salads

** can be frozen

Thank you for your ideas. Next is spring break, so with two of us in the house, there will be extra time for cooking.
