Anyone made Italian hot "pickled" veggies?

I've been reading about veggie ferments and see how they could become addicting. I just bottled my ginger beer today and have some kraut in the crock, but otherwise am a fermenting virgin. I have really been wanting some of those hot pickled Italian veggies that are sold in jars and am considering trying to make them (fermented though) myself. They usually have cauliflower, various peppers, and carrots. Would the cauliflower turn mushy? If you've tried this, I'd love to have your recipe to hear your tips!

I haven't tried fermenting veggies yet, but the italian veggie mix sounds really good. Maybe someone does have a recipe.
