This is my latest thought for convenient freezer storage: I want to get a big (but not too big--I have a side by side freezer/fridge) glass, or possibly plastic, box with a plastic lid to go on a shelf in my freezer. Then I will freeze foods (trying to do more meal freezing), wrap them in wax or parchment paper, and stack them all in the box.

So I will have different kinds of food all together in the same box. They won't get freezer burn because the box is airtight, right?? I will put them in the box after they are already frozen solid (so a serving of lasagna can be wrapped in paper because it's already hard.

Does this sound feasable? Does anyone else do anything like this?

Also, how does cloth do in the freezer? Could I wrap them in cloth inside the box?

I don't want plastic touching my food, and I gather aluminum is similarly undesirable, yes? Any problems with parchment paper or wax paper that I should know about? I got enviro-friendly ones from the health food store, if that matters.

Wax paper for us tends to stick to food. There is a special paper you can buy called Freezer Paper (sold at Sams or the grocery, etc.). I personally don't mind plastic touching the food, since plastic only leaches in hot situations, that I'm aware of.

When DS was born, my mom made meals and froze them for us. She cooked everything in an 8x8 pan lined with wax paper (parchment? The one that is oven safe) and froze it in the pan, popped it out, and froze each one in a plastic bag. They stacked so nicely in the freezer and were really convenient when we needed dinner but were too tired to cook. I would defrost one in the fridge overnight, pop it into an 8x8 pan, and bake for 30 minutes. Dinner with no muss!

You could probably do it without the plastic wrap. I don't have objections to using plastic, but I'm sure you could find a way to do the same thing without it.

This is a funny topic, because I am trying to do less freezing! Other than my meats, which I need to buy in bulk, I am trying to keep everything else as either fresh, dry or canned.

I freeze in Ball or Kerr jars. They take up very little space, be careful about them being too full though, I had two break today.
