I converted a cookie recipe!

Is it wrong to be so pround? LOL. I converted the bread crumb cookie recipe from The Tightwad Gazette making it no longer frugal but much healthier! Here's the original recipe, I'll add my changes in red:

Bread Crumb Cookies
  • 1 1/4 C flour used organic whole wheat pastry flour
  • 1 1/4 C sugar cut down to 3/4 C and used evap cane sugar, I will be getting sucant instead soon...don't cut below 3/4C, I tried 2/3C the second time and I'm the only one who will eat them
  • 1/2 tsp salt used 1/4 tsp since my sea salt is really finely ground
  • 1/2 tsp baking powder
  • 1/3 C cocoa
  • 1/2 C milk I used a combo of yogurt and milk
  • 1 egg I ended up using 2 tbsp water + 1 tbsp ground flax cuz I ran out of eggs, oops!
  • 1 1/2 tsp vanilla
  • 2/3 C melted shortening used coconut oil, could also use butter. The second time I replaced half with applesauce cuz we had this aweful tasting applesauce that I wanted to try using up in baking...don't recomend it in these cookies, lol
  • 2 C bread crumbs used sprouted 7 grain bread ground up in coffee grinder
  • I also added 1/2 C dried coconut

Sift together dry ingredients (excpet bread crumbs). Combine wet ingredients (except shortening) and add to dry mixture. Add melted shortening and bread crumbs. Drop by spoonfulls onto an ungreased cookie sheet. Bake at 350 for 15 minutes or until done. I sifted together flour, salt and cocoa, then added yogurt/milk combo and soaked overnight. Next morning I added everything else, beating it in with an electric mixer. Cooked as recipe derects and they turned out just like the unsoaked recipe.

Yay! Good job!

Once you get used to converting recipes, it becomes second nature and goes really fast. I've got a detailed list of instructions to help newbies convert recipes on my website.

Thanks so much, mamabohl! Not only do I think the recipe looks yummy, but I love the fact that you posted your comments about what you substituted, why and what the results were. Very inspiring! Oh, and it's not a bad thing to be proud of your accomplishment. Well done!
