Can Beans, Dry Beans, Soaking Rice -few questions

I'm starting to phase out my can foods (mostly beans, ocassional cream corn, and fruit). My question is... can we simply cook and then freeze beans w/o adding anything to them? If so, how long do they last in the freezer?

By soaking beans, how long should they be soaked?

How long should rice be soaked?

I'm new to all these things!

You can totally freeze them. I don't know how long they last in the freezer, but I've never had them go bad.

I usually soak beans overnight, and then cook them in the crockpot all day. I don't soak rice--if you cook brown rice for a very long time, at least according to NT, you don't need to soak it.

(Although I have to admit that I make white basmati a LOT because we all lurv it so much here).

I have a question too! I recently read that you have to boil beans before (or after?) you soak them, otherwise they are poisonous?? I have never done so, and am fine, but now I wonder if I was just lucky?
