another water kefir question

when you make your water kefir, do you put a lid on it to close it up or do you leave it more open and just cover with a cloth?

Also, what juices are good to add to your water kefir? I am right now making some with grape.

I cover with a lid but make sure it's a lid that's not airtight so it allows air through or pressure may build up as it ferments. Any of the sweet, non-citrusy juices seem to work well. I also try not to use the thick juices like apricot and peach. I've used grape, pomegranate, sweet cherry, and blueberry. I've tried sticking grains straight into the juices and you end up with an alcoholic brew that's similar to a wine. The more sugar to water content you have, the more the brew ends up tasting wine-y or ale-y.

I put a lid on. I've never made it with juice so can't help you there.
