struggling vegetarian

Hi, my son (2yrs) and I are vegetarians, no dairy, no wheat or yeast. we eat some eggs.
Does anyone eat like this that could commiserate with me? I am struggling with food right now as I don't have the time to dedicate to cooking like usual.

It is so hard to be wheat free when most soy "fast" foods contain wheat and wheat gluten. If anyone knows of some soy products that are wheat free please let me know. I also dream of finding a cookbook that is veggie and wheat free so if anyone knows of one let me know.

I really like Nava Atlas' cookbooks Vegetarian Express and the Vegetarian 5 Ingredient Gourmet. Really fast, really easy, really good recipes. And many of them are wheat-free.

Can you get Ethnic Gourmet/Taj Gourmet frozen foods where you live? Some of their entrees like Chana Bhaji, Vegetable Korma, Bean Masala, and Eggplant Bhartha are dairy and wheat free.

We eat lots of easy veggies like broccoli, baby carrots, and spinach, that can be steamed or microwaved easily, as side dishes to things like stir fry with brown rice (the stir fry can be very simple, maybe tofu with a couple red and yellow bell peppers and some mushrooms); veggie chili (we make a lot at once then freeze it); quinoa- or rice-based pasta with jarred sauce (we like Muir Glen organic). The make-ahead-and-freeze-it also works really well with soups.

Only thing I can think of off hand is Simple Treats cookies. Dairy and wheat free. Not sure about soy.
