Ds used to like Amy's frozen pizza with the whole wheat crust. I recently noticed a white flour tortilla that had a ton of fiber at my regular grocery store. I don't know what brand, just that it had a green bag. My ds pretty much doesn't like any fresh food, but will eat dried papaya spears (which are very candy like and contain sugar) and fruit leather (look for organic fruit leather at Target if you have one near by. I think the brand is Archer's Farm or something. It's cheaper). He also likes tamari almonds.
I get frozen organic spinach (spinach is a high pesticide veggie, so I get organic) and run it through the food processor while it is still frozen. It gets very fine in texture that way and I add a little to mac and cheese. You can process extra and subdivide it so you have several batches ready to go in the freezer. It will be green if that is an issue, but no chunks.
If I bake something, I add ground almonds and ground flaxseed. I usually grind the almonds and flaxseed in my coffee grinder. Ds isn't into muffins or even usually cookies, but he likes waffles. I make a bunch with the almonds, flaxseed, and grated carrots or grated zucchini, and I keep them in the freezer. I put them in the toaster oven when he wants one. He also loves Van's brand frozen waffles but I don't know how much fiber they have.
Ds stopped drinking my homemade smoothies, but he will still occassionally drink the Stonyfield Farms ones (they make the yobaby drinkable yogurts and an adult lowfat version with added vitamins).
My ds also used to like hummus which is good with carrot sticks, pita bread, and many other things.
He likes olives.
I know some of the above suggestions might be a bit labor intensive with a new babe, but I was also thinking of how to add fiber, in addition to easy foods
