Whjat to do with turkey fat?

I got the most amazing, pastured turkey for Thanksgiving. It was so juicy and tender, with fabulous golden brown gravy that did not even need salt it was so flavorful. It also produced quite a bit of nice brown fat that I have reserved in a bowl. Anyone have any good uses for it? Do I just treat it like lard?

dunno,cook with it?
i made stock with my turkey, and really good gravy with the fat and drippings

I would use it like butter, flavor rice and veggies with it. I did that recently with some chicken fat I had left over and it adds a nice flavor to the food.

I did both of those and still have about 2 cups of dark brown fat leftover!

Dhs mom used to make chicken fat brownies--so, I guess you could substitute it for just about any fat when cooking or baking.
