will it keep brewing like kefir will? I've had some kombucha in the fridge for a couple of weeks while I was out of town. Today I tried it and it was still pretty sweet, so I'm wondering if I can just set it out on the counter for a few days to brew some more.

Yes, it will work fine. It will also get more sour in the fridge very slowly, just like kefir. You may even end up with little scoby pieces at the top. I left some at work in a little jar I was drinking from and ended up with floaty pieces after a couple of days.
