How do you make curds?

A friend was telling me she used to eat curds as a kid on the farm. She said they were almost dry, not like cottage cheese. My farmer makes cottage cheese but has never mentioned curds. Anyone know how to make these? I get raw milk and cream that I could use.

to make curds, you simply have to sour your milk enough to get it to separate, then drain the whey off the curd. To sour your milk, you can use vinegar, lemon juice or rennet. Salting the curds will help draw out more moisture for a firmer, drier consistency. You might want to check out Wild Fermentation for more specifics.

Can you use this whey for lacto fermented veggies. Is it just the same as using whey from yogurt or kefir.

I would say so.
Others might differ in opinion though.

(FWIW, I don't use whey for fermenting.)
