So I soaked some steel cut oatmeal in water and whey. I planned to make pancakes with it this morning so last night I mixed in whole wheat flour and some slightly old raw milk. This morning when I got up I realized I didn't have any eggs, so I ate some of the oatmeal that I hadn't mixed the flour and milk in. This evening I checked and the flour/oatmeal/milk mixture was bubbly and rising. It smells kind of yeasty. That's good. right? That's what I'm trying to make, isn't it? It doesn't smell rotten but in my pre-NT days I would have thrown this away. Do you think tomorrow I can add egg and call it pancakes? Do I need baking powder/soda if it's bubbly?

It sounds like it's just fermenting. Would you normally use baking soda for sourdough pancakes? If not I don't think you would need it for your mix, either.

SOunds like it is still good to me. Trust your nose. If it smells sweet and yeasty than that usually means it is good and just fermenting.
To me when fermenting goes bad it is VERY obvious....smells like nasty feet! YUCK....no mistaking it.
