I asked this on another board last night since we just found my DS is allergic to dairy. Here's some stuff:
meatloaf-use rice milk if your recipe calls for milk, with smashed potatoes made with rice milk and smart balance light butter.
Hot dogs-ball park beef franks with Sara Lee wheat buns, french fries, Bush veg. baked beans
Roast and veggies
Pork tenderloin with marinade, BBQ sauce with potato salad and veggie
spagetti-there are some dairy free sauces, just read the labels
I make garlic toast with Sara Lee bread and thre are some dairy free frozen breads I have found at Wal-Mart, like Sister Schuberts yeast rolls
lots of chicken breasts, potato and veggies
I get on allrecipes.com and look for recipes that I think I can alter if needed.
Goolosh-
1 # hamb meat-browned and drained
add some garlic salt
1 lg. can of tomato juice
about 1.5 (dry) cups elbow noodles-cooked and drained
2 cans stewed tomatoes
sprinkle of sugar and S&P
Combine all ingredients and simmer. Turn off heat and let macaroni soak up the juice. You might need to add more tomato juice if its dry.
We eat it with Jiffy cornbread muffins made with rice milk
"Easy soup"-good soup, you can freeze half for later
2 #s hamburger meat-brown and drain
then add:
2 cans rotel
2 cans minestrone soup (read labels)
2 cans chili beans
1 lg can tomato juice, around 16 ounces
Heat it up, let simmer and enjoy. Your DH can put cheese on top.
Chicken salad-
boil some frozen chicken tenderloins until done, let cool, then cut in bite size pieces
Chopped purple grapes in half
1 red delicious apple
dash of salt
mayo
*Mix it all together, add stuff until it all looks even, cover and let chill for a few hours. Yummy on bread, with crackers and soup
This is what we had tonight:
Easy chicken noodle soup
1 tbs butter-smart balance light or olive oil
1/2 cup chopped onion
1/2 cup chopped celery
4 cans chicken broth
1 can veg. broth
1/2 pound chopped cooked chicken
1.5 cups dry egg noodles
1 cup sliced carrots
1/2 teaspoon basil
1/2 teaspoon dried oregano
S&P
melt butter, then saute onion and celery until tender. Our in broths and rest of ingredients. Bring to a boil, then cover and let simmer 20 minutes.
