Can someone explain to me how to "blind stitch" something (by hand)?

I am making several soft trees from the free pattern at little birds handmade. They are so, so cute - and quite easy. Except that when it comes time to close them (after turning right side out and stuffing), I'm at a loss. It says to blind stitch them closed. I've looked at a couple of online tutes, as well as a handsewing book I have, but I don't get it yet. Is there any way for me to sew these closed without it being totally obvious where I've sewed?

This is the stitch I also use for hand applique. Here is a link that shows the stitch well.

Notice the first picture. You'll be making tight stitches on top, with the longest loop "inside" and hidden. It takes a little practice, but you can make the stitches almost invisible.
