Coconut Oatmeal

This turned out pretty well, didn't measure anything though...

I soaked rolled oats overnight in plain yogurt/water.

In the morning, I added water, a heaping scoop of coconut oil, raisins & a couple big scoops of dried, unsulphured coconut & cooked until done.

I poured the oatmeal into bowls, drizzled a little maple syrup over top & added a couple big dollops of plain yogurt.

I make oatmeal out of soaked steel cut oats, coconut cream concentrate and raisins all the time. yum... and healthy.

I made baked oatmeal with coconut milk, but something about the texture of the dried coconut was delish.

i've been making baked oatmeal by gardenmommy's recipe with coconut milk, and I've been meaning to add flaked coconut..

I've had it for breakfast for weeks now, finally got it the way I like it.
