healthier "biscotti"?

I thought I would never, ever give my DS anything with sugar in it, but this week he's split 3 biscotti with me :

He really seems to love how hard and crunchy they are. Any suggestions for making something biscotti-like without sugar, and (ideally) gluten free, so that my DH can eat some too? I've never made biscotti and have no idea how they're made.

Biscotti are pretty easy to make they are basically a dry cookie. My recipe has a fair amount of sugar though but at least it is a butter "base". I can't help with the gluten free part either. Here's the recipe I use so you can see what all is in them.

I'm not gluten free, but always find food blogs interesting so I had to head on over there and having a grand time reading the entries. He's actually got a few more recipes for biscotti on this site and these two are actually sweet ones (vs savory):

Yeah! I saw those too. I'm going to have to try them. I just made the parmesan biscotti tonight and they turned out great! I did make one concession to DS's discerning toddler palate, by reducing the pepper to "a teensy weensy amount"

I too discovered this week that my wee one enjoys biscotti. This recipie is good, and I'd just suggest substituting rice flour for the regular. You may need to play a little mad scientist with the baking time, I don't know.

Cranberry Biscotti

3 eggs...1/4C sugar...3TBS butter...1tsp vanilla....zest of 1 orange....1TBS orange juice (from zested orange)...1 2/3 C flour...1tsp Baking Powder...1/4tsp salt...1/4 tsp nutmeg...1/2C chopped fresh cranberries.

preheat oven to 350F / grease cookie sheet.

Beat eggs until foamy, then slowly add sugar, beating untill light.
Add butter, vanilla, zest, and juice.
In seperate bowl combine dry ingredients.
Add dry ingredients to egg mixture, blend well....add cranberries.

Divide soft dough and mold into 2 long thin loafs on cookie sheet.

Bake for 25 min...remove from oven and reduce heat to 325 F....let cool for 10 min....slice on diagolal into 1 1/2 inch thick pieces....return to cookie sheet and toast on 5 min....flip cookies and toast an additional 10 min.
