My Turn!! These are all dairy free and red meat free...
SUNDAY - Pasta with Homemade Sauce, turkey meatballs - served with tossed salad and semolina bread.
you will need:
2 pounds ground turkey, 2 packs of sweet sausage (if you like), 4 large cans crushed tomatoes, 1 large can tomato paste, garlic powder, Maggi seasoning, oregano, 1 onion, 2 Bay Leaves
Chop the onion and put it in a large pot with some olive oil coating the bottom. In a pan, brown the sausage (poke holes in it). Once the onion is soft, put the tomato paste in the pot, cook a bit and then addd the crushed tomatoes and fill one of the empty cans with water and add that too.
Add about 1/2 tablespoon salt, 1 1/2 tablespoon garlic powder, 1 tablespoon pepper, 2 bay leaves - rip them a little, 1 tablespoon sugar and add the browned sausage.
To make the turkey meatballs - mix the ground turkey, 1/2 medium onion (chopped), 2 eggs, salt, pepper, 1 1/4 cup bread crumbs (we use Jasons and add seasonings - there is no dairy in these breadcrumbs), 12 shakes of the Maggi seasoning.
Roll into balls, brown them and add to sauce. Cook the sauce for several hours, stirring every half hour - I usually keep it on the stove all day. Rigatoni tastes best with this sauce - or some other hearty noodle.
Dessert - Apple-Pear crisp - peel 3 apples and 2 pears and slice them. Put in a square dish - a casserole dish works well. Add 3 tablespoons sugar. In a bowl, combine 1/2 cup rolled oats, 1/2 cup brown sugar, 1/4 cup flour, 1/2 teaspoon cinnamon 1/4 cup chopped nuts (walnuts or pecans work best) and cut in 1/4 cup Earths Balance non-dairy "butter" until crumbs form. Sprinkle this topping over the apples and pears. Bake crisp in a 375 degree oven for 30-35 minutes. Serve warm with soy delicious vanilla!
MONDAY - Chicken stir fry - cut up a pound or a little less chicken breasts, put olive oil or sesame oil in wok, let it heat up. Chop up onion and slice carrots into sticks. Add snap peas and water chestnuts. Cook chicken in hot wok first - then add veggies. Make basmati rice on the side - following instructions on the package. Once chicken is mostly cooked, add veggies and stir fry. Serve over the rice.
Dessert - Leftover apple/pear crisp, of course!
TUESDAY - Turkey meat loaf - put 1 pound ground turkey in bowl, add 1 1/2 cup seasoned bread crumbs (we use Jasons - no dairy), an egg, 1/2 chopped onion, 12 shakes Maggi Seasoning, salt and pepper, 1/4 of an 8 ounce can of tomato sauce (save the rest), - mix all together - form loaf and place in pan. Boil several small potatoes, peel. Bake turkey loaf in 375 degree oven for 35 minutes. Remove loaf, put potatoes in pan around the loaf and pour remaining can tomato sauce over the loaf and potatoes. Bake for another 15 minutes. Serve with salad or a veggie.
Dessert - fresh watermelon and canteloupe
WEDNESDAY - Black Beans with Rice
Cook basmati rice according to package. Open can of black beans, pour into skillet on medium heat. Add rosemary, salt, pepper, oregano - as much as you want - to taste. Once it cooks down, add it to the rice and mix. Serve warm with tortilla chips and a green salad.
Dessert - fresh baked oatmeal cookie sandwiches. Use recipe on Quaker Oats - use Earths Balance instead of butter or margarine. Heat them in the microwave and put some soy delicious vanilla in between two cookies to make a sandwich.
THURSDAY - Pork Tenderloin, Carrots and Rice Pilaf
Season pork tenderloin with salt and pepper - grill it for an hour or so (check temp should be pink on the outside and dark in the center). Blanch carrots and add calamata olives and fresh ground pepper. Prepare rice pilaf - we like Near East brand.
Dessert - Fresh watermelon, canteloupe
FRIDAY - Pizza night. Get wood fire grilled crusts, pizza sauce, fresh basil, calamata olives, mushrooms - whatever toppings you enjoy. We don't use cheese, but feel free to.

SATURDAY - Grill Night - grill veggies - all kinds, turkey burgers, chicken - whatever you like - also corn on the cob, fresh green beans - snip off the ends, blanch them and then add to hot skillet with olive oil and fresh ground pepper. Add pignoli nuts and sautee. YUM! Grill some potatoes too - wrap in foil with a little olive oil, parsley and rosemary.
