I use AFM SafeChoice, but I have to avoid a lot more than gluten and soy. It's also aloe-free, frag-free, EDTA/paraben-free, etc. It does have SLS, but that doesn't bother me.

I've bought from Gluten-Free Savonnerie. http://www.gfsoap.com/ It's a long list of chemical names in the ingredients, and I'd like to get away from that. But I did like their stuff, it's just not too good for oily hair.
