The current "what's on your menu this week" thread is getting so long and I'd really like to see everyone's weekly menu for inspiration for myself.

What do you think?

Weekly sounds fabulous to me! The GIANT thread going currently is really overwhelming for me!

We are finishing up items in our pantry and transitioning to a Traditional Foods (TF) diet so our menus should change quite a bit over the next couple of months.

This week we are having:
M: Spaghetti squash with sauce, salad, pineapple & apple slices
T: Crockpot Chicken in Sour Cream Sauce over whole wheat egg noodles, broccoli, salad, orange slices
W: Pancakes with whipped cream and fruit salsa, bacon, veggie omelets
Th: whole roasted chicken, sweet potato dollars, Brussels sprouts, home-canned applesauce
F: homemade pizza with white sauce, feta cheese, black olives, mozzarella; a salad with greek dressing, and grapes

Can I join?? I've always been a meal planning loser and am determined to change it now that i'm a SAHM. The MDC threads have been amazingly inspiring but I could probably use some friendly accountability!

This is my first week. I finally made a list of all the things that I cook, added some recipes I've been wanting to try, separated by kind of meal, and organized the week thusly:

Sun - Soup/Stew/Chili Night
Mon - Meat (Red meat, pork or eggs) night
Tues - Poultry (or Fish) Night
Wed - Bean Dish Night
Thurs - Leftover Night
Fri - Poultry Night
Saturday - Grain Dish Night

I swap the nights based on a bunch of things, but that's the rough outline. Dh is Type 1(ish) diabetic and eats no carbs at all, dd has multiple sensitivities and we're wheat-phobes anyway, and I'm on WW, lol. So I had to plan this based on what nights dh can be home for dinner and what days I have time to make him something to eat. We're normally a fend-for-yourself family, but I just finished grad school and would really like to sit and eat together at home once in awhile now.

This week was/is:

Sunday: Spanish chicken and rice
Monday: Cheeseburgers and broccoli
Tuesday - Sausage and rice casserole
Wednesday - Quinoa and Black Bean Bake
Thursday - Mexican Soup
Friday - Chicken burgers and sauteed spinach with parmesan
Saturday - (some hominy dish I can't remember the name of, lol)

Doing okay so far...wish me luck!

Hi Judegirl:

Your menu looks great to me. I'm new at this too. I actually left mine blank, and filled it out yesterday....after I'd cooked Sun!!!

My dd is allergic to grains, peanuts and dairy. And I'm always on a diet Two kids are very picky. So....... maybe we can encourage each other.

Ooo - great suggestions! I get some inspiration too from www.modernmenus.com. You can sign up for the newsletter (free) with meal tips, etc.

This week we're enjoying:
- black beans and rice (cook up with salsa and veggies - yummy and can make it spicy)
- butternut squash soup, a salad and spagetti
- homemade pizza (I buy frozen dough and throw on veggies)
- grilled salmon, brown rice, and a veggie (whatever's on sale)
- turkey burgers
and then probably pick something up for one day this week.

Maybe this will help me get my act in order before 5pm when it's chaos and dd is HUNGRY!!!

SO far this week:
M - My mom cooks dinner each week!!!
T - Quinoia with steamed veggies, baby green salad with cashews, sunflower seeds, goat feta and avocado
W - Veggie wraps - rice, black beans, tomatoes, avocado, mixed greens, salsa (gmas homemade), mushrooms and onions
T - Salmon fillets baked in my little concoction sauce, brown rice, broccoli and asparagus mixed with artichokes
F - Dad's bday so we are going out for sushi, though I am making a yummy and delicious all natural spice cake with vegan frosting (to accomodate my sis)
S - Homemade pizza (thanks for that great idea...it's been a while since we've done these)
S - Family dinner - I am bringing eggplant parmesean with rice and flax noodles

I feel lucky that I get two meals per week that I don't really have to do much. Every Sunday is family dinner, and I have yoga school on Monday nites so my mom cooks dinner. Then this week is a bday so I get a whole extra night off!!!

this is a great idea! New to this since is just dh and myself, but now that we have an angel otw, i'd like to start planning. We usually plan day-by-day or maybe a couple of days, but as tired as I have been this is one less to worry about.

Dh did get a nice smoker grill for Christmas and this week we smoked all the meat, poultry, fish on his day off and had yummy meats all week and just had to fix sides.Smoked some salmon, whole chicken, some pork and beef cuts.

Thanks Anna!

NorthCountryMama - Where do you find flax noodles? And are they 100% flaxseed?

I'm 4 for 4 so far! I tried 2 new recipes this week, and fed the freezer with a soup and browned and seasoned beef today for chili in a couple of weeks.

I started to plan beyond next week, though, and realized that I don't have enough ideas! I get bored very easily, and the thought of eating the same thing once every single month drives me batty. OTOH, I haven't the time to be trying a new recipe 4 nights a week (I'm hoping more people post here and remind me of things I already know how to make but have forgotten!)

Off to search for recipes!

oh, the noodles are flax and rice...not just flax (it looked like the rice and flax noodles were two separate items sorry). Wouldn't that be great to find!!!

I think the ones we use are Eden Organics.

This is a really helpful thread...getting all sorts of ideas rolling through my mind for next week!!!
