Any interest in a weekly menu thread? See current thread (1/8-1/14) New ones weekly! - Page 2

I'm gonna start doing this next week. After doing my own "pantry challenge" and having to throw away lots of food that was 1 yr or more past the expiration date : I realized that making a meal plan would not only save time but a lot of $ too. So from now on when I go shopping I'm only buying what's on the list and only putting foods on my grocery list that I *know* I'm going to use.

I'm just gonna do M-F:



M- Beef and vegetable stew in the crockpot, homemade biscuits

T- Salmon w/ creamy parmesean noodles and green peas

W- Bubble n Squeak (a veggie and cheese filled potato pancake)

T- Creamy Veg Soup (using leftover mashed potatoes), biscuits w/ butter

F- Homemade pizza, salad

Just some ideas I came up with for breakfasts and lunch...

Breakfasts will be:

Oatmeal
Yogurt
Smoothies
Breakfast pizza
Muffins
Eggs

Lunches will be:

Leftovers
Egg salad sandwiches
Salmon salad sandwiches
Grilled veggie sandwiches
Raw cheese and veggie sandwiches
Pimento cheese on toast
Big salads w. romaine, spinach, avocados, red onions, hard boilded egg etc.
Soups (leftover/premade)
Coleslaw (I have the BEST recipe and I'm gonna make a bunch of it next week )
Quesadillas
Deviled Eggs

I did this too and I was so mad at myself for letting food go bad.

Yay! I'm in. :D

This week:

Tonight: Homeade veggie enchiladas and corn tortilla chips
Sunday: Whole wheat pasta, garlic bread, brocolli
Monday: Baked acorn squash, rice pilaf, mixed veggies
Tuesday: Chili w/cornbread
Wednesday: Leftover chili becomes filling for more enchiladas, this time with corn/random vegetable
Thursday: Stir Fry [Veggies, sauce, rice]
Friday: Pasta, garlic bread, mixed veg.
Saturday: 15 bean soup and bread
Sunday: Soup.

After that, who knows?
