favorite fast dinners?

What are your favorite 30 minute or less meals?

I'm trying to figure out a plan for school nights, when I'll get home at 8:30 or 9.

When I know I am going to be late, I use my crockpot.

In it, I make soups, stews, and pot roast.

I'm far too unorganized for the crockpot. I always think I'll make a pot roast, or chicken in it and I never seem to get it done

When I was pregnant, the foreman grill, frozen veggies, and a box of rice or stuffing were GREAT friends! I could take the meat out to thaw before I left (or put it in the fridge a few days before, whichever way you do it), and when we got home, we were fifteen minutes away from a hot meal. Works great for hot sammiches, too (yum). If you make soup and freeze it in smaller portions, you could do hot sandwiches and soup when you got home, thats' quick, too.

Otherwise, I'd start doubling up when you're home and freezing what you have left, then pulling stuff from the "stash" when you get home, nuke it thawed, and cook it quickly (casseroles, taco meat, sloppy joes, etc).

If you're a meat eater, kielbasa and butter noodles always cook up quick, with a green salad.

That's all I can think of off the cuff.

Egg and potato. It sounds gross, but I use canned potatoes and add two beaten eggs and some spinach/pepper/mushroom or whatever veg I have. Cook it all in a pan until it gets crispy on the bottom.

I also like hot open face sandwiches with leftover meat, quick gravy and really good bread. That with a salad is great.

Meatloaf patties (make a meatloaf recipe but grill them like burgers so it takes just a few minutes instead of 50 minutes like meatloaf), corn and salad. All ready in 15 minutes.

Beef stew or chili in the crockpot...

When the weather gets warm again we eat lots of chicken salads. Just have the chicken cooked up in advance and big chicken salads can come together in just a couple of minutes. I like making a southwest chicken salad with black beans, corn, red peppers, cilantro, red onions and a bit of barbeque sauce...and serving it with warmed sprouted corn tortillas with a bit of butter and raw honey. Then there is curried chicken salad with apples, raisins and celery...Thai chicken salad with peanut dressing, red peppers and cucumbers...the possibilities are endless.

We do chicken salads too. Other fast dinners are stir-fry with noodles and fajitas although you need to have a bunch of veggies stocked for these.

Stirfry:

Onion
Some combination of carrots, bell peppers, mushrooms, broccoli, cabbage, cauliflower, bean sprouts.
Beef/Chicken/Tofu/Shrimp
Noodle package with sauce. Cook the meat then add veggies and right before serving add cooked noodles with sauce. Stir and voila.

Fajitas:
onion
bell pepper
mushrooms
Beef/Chicken/Tofu/Shrimp
Wheat tortillas

Moros and christianos.

White rice, a can of black beans, and a pound of ground beef mixed with 8 oz tomato sauce and whatever spices tickle your fancy.

Serve the beans (moros) on one side, the rice (christianos) on the other, the "blood" in the middle.

slow cooker meals are great for when I can't be home to start dinner.

Otherwise, I like to put chicken breasts in a pan to bake and cover them with one can of cheddar cheese soup and half can of water. When I get home I cook up some rice and lay the chicken on the rice and serve with a veggie. This is my favorite meal because I can pop it in when I walk in the door and it is cooked in less than an hour.

I also keep chicken salad made up from leftover chicken each week so that's a quick sandwich if we need one.

Sweet Potatos
Curry Powder, Turmeric, Cinnamon, Ginger
Diced Tomatos (from a Can)

Simmer for 25 minutes -- eat plain or over rice. Yum!

Our favorites for quick dinners are:
-Red Beans & Rice (I usually put broccoli in it at the end but you could put sausage if you eat meat - we eat it some but not much)
-I usually have frozen sauce for pasta... either spaghetti or tortelini, very quick to make
-Quesadillias (Beans and cheese with sour cream and guacamole is what we like but precooked chicken or some left over from another meal would be good too on there)
-If you already have rice made (like make a double batch the next time you make rice) you can make fried rice really quickly
-Homemade pizza
-Stir Fry

Well I am sure there is more but that's all I can think of right now!

I want to make a stir fry,, i can go to farmers market and get the veggies soon, i just need directions.. Bad craving
