When I was pregnant, the foreman grill, frozen veggies, and a box of rice or stuffing were GREAT friends! I could take the meat out to thaw before I left (or put it in the fridge a few days before, whichever way you do it), and when we got home, we were fifteen minutes away from a hot meal. Works great for hot sammiches, too (yum). If you make soup and freeze it in smaller portions, you could do hot sandwiches and soup when you got home, thats' quick, too.
Otherwise, I'd start doubling up when you're home and freezing what you have left, then pulling stuff from the "stash" when you get home, nuke it thawed, and cook it quickly (casseroles, taco meat, sloppy joes, etc).
If you're a meat eater, kielbasa and butter noodles always cook up quick, with a green salad.
