Stuck in a Rut

I'm totally in a dinner rut. All we've been eating for dinner is hamburgers and eggs and bacon.: We were eating chili, my ultimate cheap and easy meal but I gave some to the dog and I guess it was too much b/c she threw it up inside, so I had to clean it up. The next time I tried to eat some chili I had frozen I almost threw up just smelling it. I'm totally pissed at myself. Being totally broke is not helping the situation either.

Last night I mixed some ground beef, chopped potatos, eggs, cheese, cumin and CO and it was pretty good. I think it would be even better if I would have added salsa to it. I used to make this and put it in tortillas but the sprouted grain tortillas are so stiff it doesn't really work.

I bought some beans to cook in my turkey stock but I'm tired of doing my beans the same way over and over again. What I usually do is make beans and the first night eat beans and cornbread and then eat chili until it's gone. But like I said before chili is out of the picture for awhile now.

I need to just get out my crockpot and try some new things. I hate trying to get dinner together at the end of the day. I love putting something in the crockpot in the morning while I'm still in a productive mood. Oh well, thanks for listening to me complain and I would love any ideas.

I love making chicken stew in the crock (just chicken and any veg's like carrots, onions, celery, zuch, potatoes/turnips, gr. beans, etc., bay leaf and some ginger near the end) - just take out the chicken pieces near the end and take off meat which usually falls off anyhow and put back in, then make stock with the bones.

Other idea... breakfast "casserole" - basically 8 eggs beatan, then put whatever veggies like sauted onion, frozen spinach, little tomato diced, some crumbled goat/creamy type cheese, cooked bacon/sausage cut up, and bake 350 for about 25 - 25 min or until set (but don't overbake or it gets rubbery). It's very convenient b/c you can cut it into squares or whatever, and it makes lots of leftovers.

I also like "hamburber soup" over rice... saute hamburger with some onions, and fenugreek, add some celery if have it, beef/chicken stock, and cook for a while, and last 15-30 min. add chopped collards/greens. It's great over rice !

Have you checked out the giant crockpot cooking thread? There are tons of recipes in there. I also love using my crockpot and have used that thread many times for ideas.

BTW, I hope you didn't put onions in that chili, cause onions are toxic to dogs.

Those look really good and I'm off the check the giant crockpot thread. I didn't know it existed, I usually just stick to the NT page, guess I need to look around more.

Ummmm...... I didn't know that about onions I knew about grapes and chocolate. I guess it was a good thing it was too much and she got sick.

We had leftovers from the night before last night. It was pretty good. I need to get my beans going so we can eat those in a couple days. One of the problems is I'm limited to the grocery store for meats so all I can afford is ground beef, cube steak and maybe a steak if they are running a great deal. Before we started buying the good stuff I would make beek stew and roast. I'm thinking about trying beef stew with ground beef. I can't imagine it'll be that different. I'm looking forward to the chicken stew too. Maybe white bean chili, since it's got a different taste I think I can handle it.

Beans and rice?

S.O.S. is good and endlessly variable. Basically, take any runny/loose concoction containing meat and whatever else and put it over toast. S.O.S. S**t on a Shingle. I made S.O.S. for lunch a couple of times this week with leftover pot pie filling because I didn't want to go to all the trouble of making another crust. Sloppy Joe's are just SOS with a hamburger bun and a more respectable name.
