how many beets do you use in beet kvass?

I chopped up my 3 beets and put them in my jar but it's 3/4 full of beets now and that seems like a lot of beets. So for those of you who've made it, how full of beets is your jar when you make it? And is the amount of salt in the recipe (1 T.) right?

In NT recipe, it's 2 large OR 3 medium beets coursely chopped (but not grated), and you put it into 2 -quart glass jar with lid, and 1 T. salt. I just noticed the recipe and have my beets and hope to make it soon (before they turn too soft !)

I know what the recipe says, but it ended up looking like a lot of beets which could make it really strong, so I was wondering what experienced "kvass-ers" did!

Mine has that much as well. I just made it a couple of weeks ago (my first batch) and just had like 2 ounces of it last night. After it sat in the fridge for a couple of weeks it seemed rather thick as well...almost a slight gelling effect. It tasted fine to me...just like salty beet juice...so I hope it's ok hehe.
