Heating the milk and then cooling it is supposed to kill off the bacteria in it. You can't add the starter to really hot milk or you'll kill it off. You still need to keep milk+starter warm to culture though - those bacteria need the heat to grow faster.

That said, I'm the one that said I don't heat the milk. I don't always have raw milk, but I still got into the habit of not heating it. I just mix the milk and starter straight from the fridge and pop it in the yogurt maker. I do my best not to contaminate either and have had no problems.
