...but is there a sticky/good starter site/definitive thread/FAQ/etc for kefir making that y'all could recommend? I am a TOTAL noob but have milk grains and want to start reading up on it. Have searched and the info is good but pretty overwhelming. Can anyone point me to a good place to begin my journey? :

A great place to start is Dom's kefir site. It is chock full of information, including pictures of how done kefir should look, recipes for water kefir, and even instructions on how to dry your grains for storage.
