preseving home-made juices.....?

1. do you do it?
2. do you recommend it?
3. any tips i should know before starting?


i have a book about preserving home-made foods / home canning and since i'm totally in love with my juicer, i'd like to put up some of my home-made juices.... but, i'm not sure how advisable this really is, or if there's anything that i "should" know ("common knowledge" type stuff) that i need to be aware of before starting that may not be mentioned outright in my book... (since it was written in the 1960's and may have not included things that Everyone knew back then and Nobody would know nowadays!)

What about freezing it? Or mixing half & half with kefir or other goodies & making popsicles, or making low sugar jelly with pomona pectin (not totally NT, but probably good on sourdough or NT waffles, pancakes, muffints, etc...)?

I think the standard method of heating it & sealing it in jars would cause you to lose much of the nutrients. So would the jam or jelly, I suppose.

I'll bet it would make great kefir sodas.

If you feel really adventurous, maybe you could add some honey & ferment it into a wonderful melomel.

You will lose some nutrients the farther you get from fresh. If it's a matter of losing the fruits/veggies to the compost pile or juicing & freezing them, or if you don't have time to pull your juicer out daily, then I think freezing would be the next best choice.

Fresh juice does make yummy kefir! Very clean tasting.

When I have a bounty of fruit, I freeze juice in sizes that I can use in my water kefir. I've still got some pomegranate juice from the fall which is a special treat these days. We're in orange season now but I've been juicing those as I need them. Even with the freeze here and the destruction of the citrus crop, I've managed to acquire some citrus.
