help me plan a TF-friendly diary elimination

This makes me ill, but I've finally accepted that I need to do a diary elimination trial for dd and I. We've been drinking raw milk and eating raw cheese since the fall, but there's still something going on here. I've been in denial about this for a long time--what a PITA!!!!

I'll poke around over in Allergies, too, but I really want advice from TF folks who get why I'm not going to do boxed milk replacements, etc. We really try to avoid any processed foods here, although dd does enjoy the periodic gf cookie since I don't really bake them myself.

I am worried about finding good nutritional replacements for the diary, especially for dd. I am especially worried about fats. We use Organic Valley cultured butter, and she eats a TON of it (a few pieces plain, plus added to everything) every day. DD doesn't do well with coconut oil, and I am trying not to overuse olive oil per the warning in EFLF that it has a tendency to cause weight gain. (I am trying to lose weight.) We are already gluten free, and I am currently not eating grains--and dd doesn't really like them (except for buttered rice noodles . . . ), so she doesn't eat them much either.

Ugh, seriously, I'm so freaked out, what am I going to feed this kid? Dd naturally gravitates toward high fat, good protien in her diet, and isn't so carby. I feel best while eating this way, too.

Knowing the above, any advice or suggestions? I'm especially interested in fat replacements. And if anyone can tell me where to get good, preservative free lard from pastured pigs, I'd really appreciate it. Can't find it around here anywhere.

Obviously I'm planning to do bone broths in place of milk for beverages containing protien and calcium. And avacados as a source of fat, as dd and I both love them. (They're so expensive, though, especially with the cold snap in CA, sigh.) We already eat a TON of eggs.

TIA for all of your advice--and sock it to me, I really need it!

This is what I did when dd2 and I eliminated dairy ( thank goodness, she seems fine with it so we are back on it now

ghee (clarified butter) is fine for most people with dairy allergies and is healing to the gut, so I would use that in stead of the butter you are using now. But in my experience, many people with dairy allergies are fine with regular butter anyway...but for elimination purposes, I would stick with ghee.

For the rest I replaced milk with home made almond milk ( that I also made into yogurt) and coconut milk. When you say that she has issues with coconut oil, does that included coconut milk as well? Of course you can make "milk" from all sorts of nuts and seeds.

I would use CLO ( if you dont already) for the A & D, and what about butter oil? I didnt think that contains any casein?

For gluten free and dairy free you might also check out the differend websites about the specific carbohydrate diet....

Oooh, ooh, do you have any info on this? I'm interested. I have the recipe for the almond drink from NT...do you just add a culture to it and prepare as regular 24 yogurt? I'd love to try it.

Ally's mom...I don't have any ideas that you haven't considered already Is there any difference with your tolerance of goat's milk versus cow's? I have a heck of a time with cow's milk and seem to do a bit better on goat's or sheep's yogurt. As for the fats, maybe she could have more of the olive oil (if weight's not an issue with her), nut butters, hummus (again with the olive oil), and the ghee sounds good. Good luck!

My ds does very well of goat's milk and he gets a rash even with raw cow milk. I am also interested in homemade almond milk and yogurt!

As far as I know, there is no casien or lactose in butter oil.

Maybe you could use the coconut oil and keep dd on the olive oil? You could make homemade mayo.

The specific carbohydrate diet is a good place for allergy-free cooking ideas. We have enjoyed recipes from there. Once you get used to dairy free it won't be so overwhelming. s I am gluten-free and eat a limited quantity of grains. My food intolerance blood test had eggs and dairy very strong on there and I have eliminated them in the past. I am still not sure if they bother me when I have challenged them....I should probably eliminate them again because my PMS breast pain is back and that could be a cause.........Jen

I feel ya - I was so upset when I had to give up dairy! It can be a real PITA at first. You get used to it though. After a month I didn't miss it at all.

For fats, I make ghee from organic, cultured butter; I also use organic lard and I save bacon fat. Coconut oil, almond oil. I leave the fat and skin on my meat. Coconut milk is filling and fatty too, and makes awesome smoothies.

I would urge you too to consider how different goats and cows milk are composition wise and try the goats milk. I've had goat milk customers that could not tolerate cows milk at all but thrive on goats milk/yogurt.
