A little late, but here it is:
Sunday - Grilled cheese sandwches and apple (dh was home with her, lol)
Monday - Chicken and rice (crockpot- it was lousy - still can't make anything tasty in that thing - but at least we ate it)
Tuesday - Turkey meatloaf with sweet potatoes, roasted asparagus and sauteed spinach (yes, three sides - dh can't have carbs)
Wednesday - Black bean burgers
Thursday - Leftover meatloaf
Friday - Baked ziti
Saturday - Haitian rice and beans
I have to say, tonight's dinner was ridiculously yummy. I can't remember the last time food tasted that good. Dd ate until she got sleepy, lol.
I used this recipe, but used half ground turkey and half ground chicken:

I used celery instead of green pepper. I used an egg instead of an egg white, but I was doubling the recipe.
As a side, I cut up several yams into small chunks, dropped some small dollops of coconut oil, drizzled a bit of maple syrup, mixed and baked at 375 for about 45 minutes-an hour. Holy moly, was that good. I couldn't believe it.
