oh, please let's not turn this into a thread where we all make self-deprecating comments about how we are (or aren't) COWS for how much we eat or don't eat. i really despise how women have a tendancy to get defensive about the food and the amounts of food we put into our bodies. we all have different nutritional needs due to varying circumstances, and even if you were NOT pregnant and breastfeeding i wouldn't have blinked twice at your delicious-sounding meal list, echospiritwarrior. it seems like a totally fine and healthy quantity of food. plus, guess what! I LOVE COWS, which is a big part of why i'm vegan.

i ate two cookies for breakfast! now i feel kind of oozy thanks to the blood sugar spike...that was silly of me.

at lunch i'm having spinach, sprouts, and avocado salad with tahini dressing. a BIG ONE, in honour of the cows. hehe.

for dinner we're having tofu fritatta with roasted kale and glazed carrots.

christacular- I deleted my dumb comment. I really wan't aiming at being negative in any way perhaps just joking. I ADORE my body, and i LOVE to eat! I'm a figure model and model through my entire pregnancy (I've even gone back to modeling 7 weeks after the birth of my daughter). I did not intend to be self-depreciating.

yay! i love my body too. it's big and fat and cuddly and wonderful.
there was no need to delete your comment, i have just seen too many threads about our delicious daily eats turn into "oh, i'm such a pig, i eat too much" that i would hate to see that happen here. i wasn't trying to bully you or anything. i hope you understand where i'm coming from.

Lunch: fruit smoothie with almond butter, flax oil, and raw choc nibs (I could eat this twice a day!!)

Snack with ds: sprouted corn tortillas with brown rice, black beans, hummus

Dins: sauteed cauliflower, broccoli, asparagus, carrots, orange pepper, chard, cashews over steamed quinoa.

Dessert: raw vanilla ice cream...mmmm

Am I the only one who seems to require a bijillion calories? dd nurses quite a bit at 17 months and we've had some recurrent thrush which makes me crave the sugar of course, but here's what I had today (assuming I remember everything):

sun butter and cherry jam and ground flax seeds on raisin sprouted grain bread
apple
some kiwi
1/2 an Amy's vegan burrito, 1/2 and Amy's shepherd's pie
some blue corn chips
tacos on sprouted corn and sprouted grain tortillas (black beans, corn peaches, salsa, mushrooms, onions, salsa, cilantro, grape tomatoes)
some weird hazlenut waffle-looking cookie
iced tea

I see some really nice ideas here, I might ask for recipes. I feel like such a slacker here for not really cooking breakfast or lunch

meowee- why so you fast until 1? For weight loss or cleansing? Maybe that would help me with this thrush issue...

Breakfast: Sprouted wheat bagel with Earth Balance and "Almonzano"--yummy parmesan-like topping from Nonna's Italian Kitchen
sips of the smoothie I made for the kids (bananas,strawberries, rice milk, coconut milk), coffee with soymilk (usually it's tea, but I've been SOO tired in the AM)

Lunch: Trader JOe's Indian Fare (heat and eat, easy!) Pubjab Choli (chickpeas) and Bengali eggplant curry, with ww tortillas-

Snack: Homemade Chai with soymilk and LOTS of sugar, nuts, few bites of dd's banana

Dinner: Made this up as I went along, and have to say it was REALLY good:
pasta with carmelized onions and kale, a pinch of saffron, Earth Balance, and lots of the Almonzano

I have a couple of hours of work to do, so I'm about to have some leftover chai.

Weird breakfast explanation:

The other night I soaked a pot of "soup bean mix" (mixed beans with barley). Yesterday I woke up, threw em in the crockpot & now I have several meals worth of beans & grain. I do this a few times a month with different beans & grains because I get CSA boxes, so having some ready made basics keep me going through the week without having to really plan or spend time I don't have on dinner. Beans & grains also freeze well, in case I have any leftover.

For dinner last night I wanted something hearty, so I made a quick chili with tomatos, peppers, garlic, onions & collards, topped it with polenta (coarse ground cornmeal cooked with water & salt for a few minutes until thick), sprinkled it with lots of nutritional yeast & baked it at 425 for 45 minutes. It's so delicious I ate it again for breakfast! Cold! Really!

Breakfast:

Double tall soy latte
Leftover Chilli Cornmeal Bake!

Lunch:

Grilled veggie pannini on eight grain bread

Snack:

Babka! :lick

Dinner:

Tofu scrambled with cooked beans & barley, bok choy, peppers, carrots, cumin, corriander, mustard seeds & nutritional yeast

Grapefruit, orange, banana smoothie with coconut milk

Breakfast: Two pieces of toast with Earth Balance and a smoothie that had banana, rice milk, peach yogurt and some flax seed

Lunch: Veggie burger with let, tom, pickles and onions - yummm

Dinner: Leftover vegan stuffed shells that I made the other night - delicious
