What non-toxic options exist for replacing fillings?

I've been reading this forum and I'm a little overwhelmed... it sounds like there are lots of different materials available for replacing mercury amalgam fillings? Apparently you can get gold, ceramic, and...what else? Are they all equally safe?

There's a composite material, but I've heard even that has risks.

My holistic dentist does porcelain onlays which I believe are the best alternative. Not the best for your pocket-book though at $950 a tooth.
