Weekly Menu Thread: February 4-10

What are you having this week?

M: vegetable beef stew, muffins
T: golden honey chicken, sweet potatoes, corn, left over muffins
W: leftover stew
Th: meatless spaghetti, peas and/or salad, breadsticks
Fri: homemade pizza
Sat: chicken pot pie
Sun: pancakes with homemade blueberry syrup

Tues: Roast Chicken
Wed: Kids: Sandwiches, Us: date night!
Thurs: Teriyaki stir fry
Fri: kids: sandwiches again, Us: Valentine Banquet
Sat: Shepherd's pie
Sun: Grilled Ham and Cheese w/ homemade bread

Monday: whole wheat cheese ravioli, raw veggies
Tuesday: crockpot chicken, corn
Wednesday: peanut veggie stirfry, brown rice
Thursday: whole wheat waffles
Friday: scrambled eggs
Saturday: spinach lasagna (make double to freeze)
Sunday: homemade pizza

TH: Chicken Enchiladas
F: Goulash
S: Chicken and Dumplings
S: Dinner w/ the fam at my parents house--probably lasagna

W: traveling with dh on a business trip

F:Reubens, roasted sweet potatoes
S: chili
S: pot roast for lunch; greens (mustard) and sausage cornbread for supper
M: meatloaf, mashed potatoes, green veggie
T: tortellini soup

I may have posted some of this on the last one - I can't keep the dates straight, lol! But something probably changed anyway.

M: Shepherd's Pie
T: Cuban Shredded Pork with Cilantro Rice
W: Red Beans and Ham
Th: Veggie Quiche
F: Leftovers
Sat: "Chicken A La Yummy"
Sun: Not sure yet...

In my house, we often each have a different meal b/c of different dietary needs. I post my dd's menu and if I can adjust it for dh or me, I do.

Monday - Sauerkraut w/ ribs, mashed potatoes
Tuesday - out w/ my mom, DH and kids did their own thing
Wednesday - Asian-style baked flounder w/ sesame roasted asparagus and ginger rice
Thursday - Italian chicken skillet
Friday - out again! (w/ kids and GPs)
Saturday - babysitting for a friend - so pizza and salad for everyone (and movies!)

Well, I plan a little differently than you ladies. I plan my meals on Fridays. But here's what I have for tonight and Saturday, and then I'll jump in on the new thread with the rest of my plans.

Friday-
parmesan garlic chicken
macaroni & cheese
green beans

Saturday-
breakfast: egg, sausage, & cheese on english muffins
lunch: leftover chicken from tonight
dinner: pancakes

My week is a little off from your guys' week (mine is feb7-12), but here is my menu plan:

wed 2/7
dinner: beef stew with turnips, rutabaga, and carrots

thurs 2/8
breakfast: larabar
lunch: leftover stew, nectarine (any uneaten stew at this point gets frozen for future lazy days)
dinner: herbed turkey burgers with avocado slices and homemade bbq sauce; kale-apple salad with jicama (recipe adapted from http://freshtopia.net/vlog/?p=97)

fri 2/9
breakfast: larabar
lunch: tahini-dressing broiled chicken breast; roasted sweet potato chunks; green salad with extra tahini dressing (make this the night before)
dinner: bbq beef brisket made with homemade bbq sauce; creamy carrot soup made with coconut milk instead of cream; steamed broccoli with olive oil

sat 2/10
breakfast: none
lunch: blueberry-nut pancakes (adapted from http://www.scdrecipe.com/recipes/r_031_00463.php); bacon; fruit (cook this on the previous night, will eat the bacon cold and reheat the pancakes in the toaster oven)
dinner: at the inlaws'

sun 2/11
breakfast: none
lunch: baked hot wings and roasted kale
dinner: leftover bbq brisket; steamed green beans with olive oil; green salad

mon 2/12
breakfast: macaroons (will bake these on sunday night)
lunch: chicken kabobs (adapted from http://www.scdrecipe.com/recipes/r_011_00372.php, use coconut milk instead of yogurt); leftover creamy carrot soup; green salad (make this whole meal the night before)

Menu ends there, I will make up the next few days on Monday and go shopping before dinner.
